Check out the lib/ folder and make sure there is no old bouncycastle file in there, but only new ones like so:
/opt/openfire/lib/bcpg-jdk15on.jar
/opt/openfire/lib/bcprov-jdk15on.jar
/opt/openfire/lib/bcpkix-jdk15on.jar
